Split Pea Soup
Description
Wonderful, hearty, unctuous split pea soup. Great for a fall or blustery winter day.

Add 8 cup water to 2 cup split peas and the veggie bouillon cube. Cook, with lid on. When boiling, reduce heat to maintain soft boiling.
You may also add a couple bay leaves. To be removed at the end, before mixing -
While split peas are cooking, heat olive oil in skillet, add chopped onion and cubed zucchini. Let fry until golden brown

Add onion/zucchini to split peas. continue to cook until split peas are very soft. Total cook time about 1 hr.
Adding zucchini to the soup will make it very unctuous. This is a trick that is applicable to all mixed soup. I will add zucchini even in winter (off-season) , but this soup without zucchini will still be yummy! -
Add salt and pepper to taste

Serve as is, or with sour cream. You can also add some toasts on top, and even some cheese, for cheese lovers.
