-Pancakes that I traditionally make with Sabine on Sunday mornings.
2 weeks before, buy a few bananas, let them ripe to become black and very mushy. If too mushy, almost liquid, and it is not Sunday yet....put them in the freezer. And defreeze on Sunday (I put the banana in the microwave for about 1 mn).
Add vinegar or lemon to milk and let sit for 5 mn until milk thickens. Why ? because pancakes are much better with buttermilk, but it sunday morning, cold outside, in my pyjama, so who wants to go buy buttermilk now?? milk + acid makes great buttermilk replacement. but make sure to wait 5 min, it is important.
Mix together all ingredients except walnut pieces. do not overmix. I use a fork and stop even if still looks a little lumpy. Adjust with flour or milk if too thick or liquid
Add walnut pieces.
Warm skillet, (position 4 of 6 on midsize gas burner) for 2 minutes.
with 1/3 cup, drop dough. Should be able to make 4 in a large skillet. 8 total with all the dough
Add a few frozen or fresh blueberries (if for Papa) or chocolates chips (if for Sabine)
Tip over after a minute or so. Make sure it is cooked through
Serve soon with maple syrup
